chicken soup

  1. Not only is chicken soup a comfort food; it’s a food which does its job in helping you feel better. Depending on what you include in your chicken soup recipe, you can increase the health benefits of your batch of chicken soup.

    Chicken Soup Recipe

    1 3 lb whole chicken, cut up
    3 stalks celery, chopped
    3 carrots, chopped
    1 onion, minced
    1 tbsp minced garlic
    1 tbsp fresh pepper
    1 tbsp salt
    1 tbsp garlic powder
    1 tbsp onion powder
    ½ tbsp crushed thyme
    Dash of poultry seasoning
    6 cups Water
    3 chicken bullion cubes (optional)

    Place water in a large pot and place the chicken in the pot as well. Boil the chicken until the meat is falling off of the bone, while skimming the foam off of the top of the pot from time to time. Remove the chicken from the water, set aside until cool.

    In the meantime, cut up the celery, carrots, and onion. Place in the pot. Then, remove the chicken from the bones and mince. Place in pot. Now, add the garlic, pepper, salt, garlic powder, onion powder, thyme and the poultry seasoning. If it seems as if there is too many additives to the soup and not enough water, now is the time to add some more. Also, add the chicken bullion cubes if you’re going to use them.

    Simmer until the carrots are tender. If you would like, towards the end of cooking time, add in the homemade egg noodles (recipe below). Spoon into bowls and serve with a salad and a few breadsticks.

    Homemade Egg Noodles

    1 cup flour (and some for rolling out)
    2 whole egg and 1 egg yolk
    1 pinch salt
    2 tbsp milk

    Place the flour in a medium sized bowl and make a well in the middle. Beat the eggs and place in the middle of the well. Mix the flour and egg until a crumbly dough forms. Add a little bit of milk, one tablespoon at a time until a firm dough forms.

    Sprinkle some flour on the surface you will be rolling out the dough. Roll out to about the thickness of a pie crust. Use a pizza cutter to cut the dough into noodle-sized pieces. Let the dough stand on the counter 2 hours to dry, then when ready, place the noodles in simmering water or soup until they float to the top.
